Le C de Centeilles

Technical data

1 - Grape varieties: a blend of Piquepoul Noir (90%) and Riveirenc Noir (10%); average yields of 40hl/ha; grapes are hand picked at alcoholic degrees over or equal to 13°5, and, for a large proportion, up to 14° G.L.

2 - Vinification: complete detemming, fermentation in open vats, frequent “pigeages” (punching) during the entire fermenting period, with a total maceration time of six weeks (or five weeks after completion of the alcoholic fermentation). The press juices are reincorporated into the free-run wine.

3 - Maturation: 12 to 18 months in enamelled steel tanks.

About the C de Centeilles...

C de Centeilles is the accomplishment of the work of a lifetime, and of the will of its winemakers to restore the originality of Languedoc wine through ancient and almost lost grape varieties.

After several vinification trials, the 2005 is in a position to reveal the originality of these forgotten varieties: Piquepoul Noir and Riveirenc Noir. We have worked it in the same way as all our other vintages.

After an "adolescent crisis" in February 2006, it can now be appreciated under its most favourable auspices.

Personality

This wine, of a beautiful rubbish red, expresses aromas of raspberry, cherry, liquorice and fine herbs. The supple tannins support delicately its fruity body enhanced by a crisp acidity.

Serve it slightly refreshed and try it with fathered game or « cassoulet ».
